Gazpacho is a favorite of mine in the summer it is cold soup and is a great way to clean out the veggies that don't cook up well.&lt;br /&gt;&lt;br /&gt;5-6 tomatoes&lt;br /&gt;1 cucumber&lt;br /&gt;1-2 pepper (bell, poblano, jalapeno what ever you have or like)&lt;br /&gt;1/2 onion&lt;br /&gt;1 Tbs cilantro or basil or parsley&lt;br /&gt;1 cup vegetable juice&lt;br /&gt;1 Tbs vinegar&lt;br /&gt;salt pepper or dried spices to taste&lt;br /&gt;&lt;br /&gt;Put all the veggies in a blender and give it enough pulses to break everything down to little bits. Pour into bowl and add remaining ingredients stir and cover. Place in fridge for a few hours or overnight to allow flavors to meld and serve cold. This is a versatile dish that can utilize many different vegetables and meats.&lt;br /&gt;&lt;br /&gt;3 cups chopped vegetables (I used carrots, onion, bell peppers, and zucchini)&lt;br /&gt;2 cloves garlic&lt;br /&gt;1 inch piece ginger (peeled and grated)&lt;br /&gt;2 Tbs butter&lt;br /&gt;2 Tbs olive oil&lt;br /&gt;4 cups cooked rice&lt;br /&gt;2 cups diced cooked chicken&lt;br /&gt;4 eggs (scrambled, yes I cook my eggs separate so they don't get lost in the rice)&lt;br /&gt;1/4 San J GF Tamari sauce or your favorite soy sauce&lt;br /&gt;1 small can peas&lt;br /&gt;black pepper to taste&lt;br /&gt;2 Tbs rice wine vinegar&lt;br /&gt;&lt;br /&gt;Saute the chopped vegetables, garlic, and ginger in olive oil and butter over medium heat for about 10 mins until cooked down and soft. Add rice and chicken and cook until every thing is thoroughly mixed and hot. Now add tamari, vinegar and black pepper and cook for 5 mins. Cook over med heat for about 5 mins until peaches are soft and then remove from heat and stir in butter. Keep stirring until butter is completely melted in to peach mixture and allow to cool completely.&lt;br /&gt;&lt;br /&gt;After peaches have cooled preheat oven to 350* and line 12 cupcake pan spots. Beat egg and sugar together until smooth and pale yellow then slowly add peaches. Combine all remaining ingredients in a sperate bowl and stir together then slowly add to peach mixture. Beat sugar and butter in mixer until smooth, then add eggs 1 at a time. Next add the milk. in separate bowl combine flour, baking soda, baking powder, salt, xathan gum, and chocolate. Stir briefly with a whisk to mix thoroughly. Add flour slowly to egg mixture scraping sides as needed. After flour is thoroughly mixed add vanilla vinegar. On that note the sausage i use is organic free range and made fresh everyday. For more recipes using real ingredients check out &lt;a href="http://www.thewholegang.org/2011/07/real-food-weekly-july-14-2011/"&gt;Real Food Weekly&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;1/2 pound Italian style chicken sausage (casing removed)&lt;br /&gt;1/2 onion chopped&lt;br /&gt;2 cloves garlic chopped&lt;br /&gt;1/2 cup grated Parmesan&lt;br /&gt;1 egg&lt;br /&gt;16 oz fresh mushrooms (make sure the are a good size to stuff)&lt;br /&gt;&lt;br /&gt;Saute onion and garlic in non stick pan till soften then add sausage and cook till done and crumbled. Allow mixture to cool thoroughly and give a quick pulse in food possessor to make sure everything is nice even consistency. Add cheese and egg and mix thoroughly.&lt;br /&gt;&lt;br /&gt;Preheat oven to 350*. Remove stems from mushrooms and wipe the caps to remove dirt. Generously stuff the caps and arrange in a single layer on baking sheet. Loosely tent pan with tin foil and bake for 20 mins. I usually add about 1/2 a teaspoon to 1 1/2 cups of flour. dressed in a light raspberry vinaigrette and tossed with fresh strawberries, almonds and creamy goat cheese. What could be more delightful and this easy?&lt;br /&gt;&lt;br /&gt;1/2 shallot, minced (about 1 tablespoon) &lt;br /&gt;2 tablespoons raspberry vinegar &lt;br /&gt;1/4 cup olive oil &lt;br /&gt;6 ounces baby spinach leaves &lt;br /&gt;5 fresh strawberries &lt;br /&gt;1/3 cup sliced almonds &lt;br /&gt;2 ounces goat cheese &lt;br /&gt;&lt;br /&gt;Combine the minced shallot and raspberry vinegar in a small bowl. Slowly add the olive oil to the mixture while continuously whisking. Mix well, and bring to a boil over medium to medium-high heat. Cook until reduced by half. Let cool until the glaze is thick and sticky. &lt;br /&gt;Brush onto grilled meats or fish during the last 2 minutes of cooking. Wash and drain the spinach. Remove large stalks.&lt;br /&gt;&lt;br /&gt;Peel the garlic. Wash and dry the basil and parsley.&lt;br /&gt;&lt;br /&gt;Squeeze the lemon. Grate the Parmesan cheese. Place the spinach, lemon juice, pine nuts, grated Parmesan, parsley, basil, garlic, salt, and pepper into a mortar and crush with a pestle.&lt;br /&gt;&lt;br /&gt;Slowly add the olive oil and continue mixing until the mixture has blended, but does not resemble a paste. If using a food processor, blend the ingredients for 10 seconds, then add the olive oil slowly, and mix until well blended but not a paste. Stir vanilla in and set aside to cool slightly. Meanwhile, in a mixer fitted with a whisk attachment (or using a hand mixer), whip the egg yolks and 1/2 cup of the granulated sugar until very light yellow and fluffy. Fold yogurt into egg yolks. In a clean, dry bowl, whip the egg whites until soft peaks form. Add the remaining 1/2 cup sugar and continue whipping just until stiff and glossy, about 30 seconds more. Fold the egg yolks into the hot chocolate mixture until barely blended. Fold in the whites until barely blended. Sprinkle the brandy and polenta evenly over the surface of the batter and fold in. Pour into the prepared pan and bake until the center is firm and a tester inserted into the center comes out clean (a few crumbs are okay), 1 to 1 1/4 hours. Let cool in the pan. In a large bowl, combine the cornmeal, flour, sugar, spice blend, and salt. In a medium bowl, beat the buttermilk, egg, and melted butter. Add to the dry ingredients and mix just until blended, being careful not to overmix. Fold in the ham. &lt;br /&gt;Preheat a large, heavy skillet or griddle over medium-high heat. Lightly grease with enough vegetable oil to leave a film on the bottom, about 1 tablespoon. Working in batches, ladle the batter into the pan 1/4 cup at a time, being careful not to overcrowd. Cook until the pancakes are golden brown underneath and bubbles form on the surface, about 2 minutes. Turn and cook until golden brown on the second side, 1 to 2 minutes. Transfer to a platter and place in the oven to keep warm. Grease your muffin tray. &lt;br /&gt;Mixture is prepared in 2 parts - wet and dry. First prepare the wet mixture. In a large mixing bowl whisk together eggs, sour cream, melted butter, milk, honey, lemon zest and juice. In a separate large mixing bowl combine all dry ingredients. Once the dry mixture is blended begin to add the wet mixture by folding into the dry mixture. As soon as both mixtures are blended spoon the mixture into the prepared muffin tray. Fill each cup about 2/3 to 3/4 full. Bake muffins for about 20 to 25 minutes, or until the top has a golden crust. When ready, remove from the oven and let them cool slightly. In a small bowl, combine the cornmeal and 2/3 cup water. In a saucepan, bring the remaining water to a boil. Gradually whisk in the cornmeal mixture; cook and stir until thickened. Stir in 2 tablespoons Parmesan cheese. When cool enough to handle, pat into a greased 12-in. pizza pan. Bake at 375 degrees F for 15 minutes or until lightly browned. Cool slightly. &lt;br /&gt;2. Place pork into a Dutch oven with onion and garlic, and add water to cover. Bring to a boil, then reduce heat to low and simmer until the meat is cooked through, about 2 hours. &lt;br /&gt;2. Add the coconut milk and sugar, stirring until sugar has dissolved. &lt;br /&gt;Add the flour, salt and coconut flavoring. Whisk until batter is smooth.  &lt;br /&gt;&lt;br /&gt;Heat a small frying pan or crepe pan over medium-high heat for at least 1 minute (without oil), or until pan is very hot - this will help to keep the pancakes/crepes from sticking. &lt;br /&gt;Now add a little oil (about 1 tsp.) and swirl it around the pan. Use a spatula to ensure the oil covers all surfaces, plus a little up the sides of the pan. &lt;br /&gt;Add about 1/4 - 1/3 cup batter (depending on how large or thick you want your pancakes/crepes), tilting the pan this way and that to distribute the batter evenly. &lt;br /&gt;Allow to cook at least 1 minute per side before trying to flip or disturb. Tip: Pancakes/crepes are ready to be flipped when edges are crisp and the underside has a little golden-brown coloring when you lift up one side slightly with a fork. &lt;br /&gt;Flip the pancake and cook the other side 1 minute. They look delicious. I have adapted it to be gf but have not tried to make it. I just thought it looked like an intresting dessert to try for coconut week on the menu swap.&lt;br /&gt;&lt;br /&gt;Ingredients&lt;br /&gt;•  3 1/2 cups  my adapted bob red mills panckake mix (see note below)&lt;br /&gt;•  1 cup sweetened flaked coconut &lt;br /&gt;•  1 cup firmly packed brown sugar &lt;br /&gt;•  1 cup butter, divided &lt;br /&gt;•  1 cup sugar &lt;br /&gt;•  3 large eggs &lt;br /&gt;•  1(20ounce)can crushed pineapple, drained &lt;br /&gt;•  toasted flaked coconut, garnish &lt;br /&gt;Directions&lt;br /&gt;1 Preheat oven to 350 degrees; lightly grease a 13x9-inch baking pan. &lt;br /&gt;2 In large bowl, combine 2 1/2 cups pancake mix, coconut, and brown sugar&lt;br /&gt;3 Using a pastry blender, cut in 1/2 cup butter until mixture is crumbly. &lt;br /&gt;4 Reserve 1 cup crumb mixture for topping. &lt;br /&gt;5 Press remaining crumb mixture evenly into bottom of prepared pan. &lt;br /&gt;6 Bake for 10 minutes. &lt;br /&gt;7 In medium bowl, beat remaining 1/2 cup butter and sugar at medium speed with an electric mixer until creamy. &lt;br /&gt;8 Add eggs, one at a time, beating well after each addition. &lt;br /&gt;9 Gradually beat in remaining 1 cup flour. &lt;br /&gt;10 Stir in pineapple. &lt;br /&gt;11 Spread mixture evenly over baked layer. &lt;br /&gt;12 Sprinkle evenly with reserved crumb mixture. &lt;br /&gt;13 Bake for 25 minutes or until a wooden pick inserted in center comes out clean. &lt;br /&gt;14 Let cool completely before cutting into squares. &lt;br /&gt;15 Garnish with toasted flaked coconut, if desired&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;note: I mix one package of bob red mills pancake mix with 1/2 cup powdered milk, 1/2 cup almond meal, and 1/2 box of pectin. I think pamelas baking mix would work nice but since I dont have it available to me I adapted what I had.&lt;br /&gt;&lt;br /&gt;Ok I made these and very tastey. The only thing I would change is the amoint of butter in the recipe. It truly stars on the grill, but the oven method is delicious also, as well as broiling.
